Roasted Acorn Squash with Brown Sugar





Has everyone noticed the plethora of activity at the gym lately?  Today I went and was amazed at the newcomers with their "resolution" checklist in hand.  These folks were all decked out in their newest, finest gym clothes purchased for these new habits that will be sustained throughout....Valentine's Day.

WAIT.A.SECOND.

Just HOLD THE PHONE.

That person....you know, that person at the gym all decked out?  That was ME. 

I was the loud runner on the treadmill.  I was the one who tried to inconspicuously pat myself and look at my clothes to make sure there were no tags left while I was running.  It was me who ran for 1 minute (Yes, only one minute.  I thought I would die.), then rethought that whole "running" thing and went back to walking.

But I went.

To treat myself, I fixed this squash and it was perfect.  I was feeling extremely proud of myself, because it would have been much easier to have had a white potatoes.  Or, let's be honest, a bag of chips.

In fact, I gave a bite to my husband and his exact words were "it tastes like apple pie."

Winner.  Winner, indeed.







Roasted Acorn Squash with Brown Sugar

Ingredients:
1 acorn squash, halved and seeded
1 T. butter
2 T. brown sugar
dash of cinnamon

Directions:
Preheat oven to 350 degrees.

Rub squash with butter and top with brown sugar.

Sprinkle each half with cinnamon.

Place in a baking dish with 1/4 cup of water in the bottom of the pan.  Cover and bake for 50 minutes.

Uncover and bake for another 10 minutes.

Remove and allow to cool before serving.
